Just for the heck of it run the air conditioner plugged into shore power for about a half hour to loosen things up. shut it down and wait about five minutes and try to restart it with the genny. Maybe the winter storage tightened it up...... who knows, it's a free test!

One component of the solution we found was to put the refrigerator on gas, not auto. On auto, it will choose AC power first. Turn off all AC power draws.
Next, put the thermostat of the A/C on the coldest setting- explanation, if it's on the coldest setting, it won't cycle off and on nearly as often.
Then, start the generator, in regular mode, not ECO. You can switch to ECO mode after everything is running fine. Things should work.

All suspicions are pointing to the fact that it is a one shot, one source deal with the AC. I don't have an automatically switchable refrigerator, so that helps eliminate that issue, but finding all sources of AC draw and shutting them down will be done. Also, the comment on setting the AC to its lowest setting is an interesting observation. Thank you! b

Try plugging the air conditioner directly to the generator (by-passing the converter)using a short as possible heavy gauge extension cord (12 gauge if possible if not 14 gauge) and see if it will start up then.

What size is your front AC? And, how old is it? My Honda EU2000i runs my newer 8000LG just fine. However, I did have some problems with the original unit which was a 6000Btu, 97 vintage. You can look on the tag (behind the filter usually) to find the running amps. My older, less efficient AC pulled a lot more amps than my new replacement 8000 Btu unit.
